Sylvain, Ambassador of the Hôtel de Charme: An Inspiring Journey
After four years at the Saint Marc hotel school in Trégunc, Sylvain left Brittany in 1990 for Germany, without speaking a word of the language. He started modestly in a 5-star hotel-restaurant and progressed quickly thanks to his talent and determination: from drinks service to commis de rang, then demi-chef de rang.
Wanting to broaden his skills, he joined a 4-star international chain as a head waiter, where he learned to meet the demands of an international clientele. Two years later, he was promoted to manager of one of the establishment's restaurants.
In 1995, Sylvain continued his career in a more family-oriented German chain. He held several positions there: F&B Manager, conference manager, then assistant manager, working in five different hotels for 10 years.
In 2005, he joined a small chain in Frankfurt to develop ambitious projects: 4 and 5 star hotels, a French brasserie, and management of a 4 star hotel near the fair. After seven years, he contributed to the expansion of this family business which would include 10 hotels, 1,500 rooms in Frankfurt, as well as several establishments in Munich, Vienna and Zurich.
In 2020, at the age of 50 and with 30 years of experience in the hotel industry, Sylvain decided to reinvent his career. With his wife Fabienne, he took over an aging hotel and transformed it into a charming 10-room establishment, designed down to the smallest details: decoration, modern technologies, refined breakfast.
A Commitment to Excellence
Passionate and perfectionist, Sylvain regrets the lack of rigor in the French hotel classification, which he finds disappointing. Refusing compromise, he chooses to no longer comply with the boxes to be ticked. Since December 2024, he has favored a model in his image: a charming hotel, without bureaucratic constraints, focused on the guest experience.
